Gujiya, a beloved Indian sweet, is a must-have during festivals like Holi. Traditionally deep-fried in ghee, we’re giving it a healthy twist by using Urban Mills Extra Virgin Olive Oil, bringing the same delightful crunch with a lighter feel. Let’s dive into this delicious recipe!

  • 1 cup khoya (mawa), crumbled

  • 1/2 cup powdered sugar

  • 1/4 cup desiccated coconut

  • 2 tbsp chopped almonds

  • 2 tbsp chopped cashews

  • 2 tbsp raisins

  • 1/2 tsp cardamom powder

Instructions:

  1. Prepare the Dough:

    • Add flour and Urban Mills Extra Virgin Olive Oil in a large mixing bowl.

    • Rub the oil into the flour until the mixture resembles breadcrumbs.

    • Gradually add water and knead into a firm dough. Cover and let it rest for 30 minutes.

  2. Prepare the Filling:

    • Heat a pan and lightly roast the crumbled khoya until golden.

    • Let it cool, then mix in powdered sugar, coconut, nuts, raisins, and cardamom powder. Set aside.

  3. Shape the Gujiyas:

    • Divide the dough into small balls and roll them into thin circles.

    • Place a spoonful of the filling in the center.

    • Fold into a half-moon shape and seal the edges by pressing and twisting or using a fork.

  4. Fry the Gujiyas:

    • Heat Urban Mills Extra Virgin Olive Oil in a deep pan on medium heat.

    • Fry the gujiyas in batches until golden brown and crispy.

    • Drain on a paper towel and let them cool.

  5. Serve & Enjoy:

    • Your crispy and delicious gujiyas are ready! Serve warm or store in an airtight container for later.
