How to Make Arbi Kofta with Mint Yogurt Dip
Step 1: Prepare the Kofta Mixture
- In a mixing bowl, mash the boiled 250 g arbi until smooth.
- Add 1/4 cup besan, 2-3 tbsp rice flour, 1-2 finely chopped green chilies, 1 tsp ginger-garlic paste, 1/2 tsp cumin powder, 1/2 tsp garam masala, and salt to taste.
- Mix well to form a smooth dough. If the mixture is too sticky, add a little more rice flour.
Step 2: Shape the Koftas
- Grease your hands with oil and take small portions of the mixture.
- Shape them into round balls (koftas) about the size of a golf ball.
Step 3: Fry the Koftas
- Heat oil in a deep frying pan over medium heat.
- Once the oil is hot, gently drop the koftas into the oil, making sure not to overcrowd the pan.

- Remove the koftas with a slotted spoon and drain on paper towels.
