Arbi Kofta with Mint Yoghurt Dip Recipe

Arbi Kofta is a delicious and flavorful Indian dish made from colocasia (arbi) and spices, shaped into dumplings and fried until golden brown. Paired with a refreshing mint yoghurt dip, it makes for an excellent appetizer or snack.

Ingredients for Arbi Kofta

For the Kofta:

  • 250 g arbi (colocasia), boiled and peeled
  • 1/4 cup besan (gram flour)
  • 2-3 tbsp rice flour (for extra crispiness)
  • 1-2 green chilies, finely chopped
  • 1 tsp ginger-garlic paste
  • 1/2 tsp cumin powder
  • 1/2 tsp garam masala
  • Salt, to taste
  • Oil, for frying

For the Mint Yoghurt Dip:

  • 1 cup plain yogurt
  • 1/2 cup fresh mint leaves
  • 1-2 green chilies, chopped (adjust to taste)
  • 1 tsp lemon juice
  • Salt, to taste

How to Make Arbi Kofta with Mint Yogurt Dip

Step 1: Prepare the Kofta Mixture

  1. In a mixing bowl, mash the boiled 250 g arbi until smooth.
  2. Add 1/4 cup besan, 2-3 tbsp rice flour, 1-2 finely chopped green chilies, 1 tsp ginger-garlic paste, 1/2 tsp cumin powder, 1/2 tsp garam masala, and salt to taste.
  3. Mix well to form a smooth dough. If the mixture is too sticky, add a little more rice flour.

 Step 2: Shape the Koftas

  1. Grease your hands with oil and take small portions of the mixture.
  2. Shape them into round balls (koftas) about the size of a golf ball.

 Step 3: Fry the Koftas

  1. Heat oil in a deep frying pan over medium heat.
  2. Once the oil is hot, gently drop the koftas into the oil, making sure not to overcrowd the pan.
  3. Fry the koftas until they are golden brown and crispy, turning occasionally for even cooking.
  4. Remove the koftas with a slotted spoon and drain on paper towels.

Step 4: Prepare the Mint Yoghurt Dip

  1. In a blender, combine 1 cup plain yogurt, 1/2 cup fresh mint leaves, 1-2 chopped green chilies, 1 tsp lemon juice, and salt to taste.
  2. Blend until smooth and creamy. Adjust seasoning if needed.

Tips for Perfect Arbi Kofta

  • Ensure the arbi is thoroughly boiled and well-mashed to prevent lumps.
  • Fry the koftas on medium heat to ensure they cook through without burning.
  • Adjust the spice level in the dip according to your preference.
